The newest ancient grain I’m obsessing over…
I had a feeling I would be into it, super foods and ancient nourishment are usually my thing:). But I hadn’t tried it until last month. Waypoint Public served up my first farro salad and life will never be the same. I realized then this would be a dish filed under “mind blown.” Oh my goodness!!
Farro contains slightly more protein & fiber than quinoa, and I much prefer the texture and taste of this grain. BONUS.. it is easier to prepare, as it doesn’t require soaking. Farro has been the superstar of our meals all week, and just the start of my love affair with this grain.
Now that the marathon and my strict training schedule is behind me I am looking forward to growing stronger & leaner through boot camp classes and Insanity home workouts… not to mention hiking & running without being concerned with my pace. Hooray for recreational running:):) So excited for new workouts and routines! And of course maintaining a daily yoga practice. That’s kind of my game plan from now through Dec.
If I get into Boston I’ll begin marathon training in January.
On our weekly Trader Joe’s run, couldn’t resist the plumpest looking pint of blueberries. Inspired, I whipped up Detoxinista’s Grain-free Blueberry Crisp (she uses lots of cinnamon, almond flour & coconut shreds to create this yummy dessert) + a blueberry dressing from The Minimalist Baker drizzled over a blueberry farro salad, + a homemade blueberry lemonade.
(Try adding in Spirulina or Chlorella to a homemade lemon/limeade. I love the Organic Burst brand).

I’ve been stalking her instagram for inspo ever since. Brimming with colorful, simple, and creative projects Olive and I have been busy all week-long channeling our inner artist.:)

While the husband was out of town for work, I really didn’t do much cooking other than boiling farro:). I made a couple of new and easy snack/meal discoveries… like this bone broth drink (from Whole Foods).
And this one will be staple in our home…local CA cauliflower sandwich thins (also found at Whole Foods). If you LOVE garlic the way I do, Majestic Garlic spread is AHHMAZING:). Only simple ingredients… garlic, flax oil, and lemon juice + jalapeño. There are a few different flavors… I bought a sun-dried tomato one to try this week. It is great as is, or make it more substantial by mixing the spread with avocado & white beans. I like to add a dollop to my salads too.
Yay for girls nights and gnocchi! It was amazing going out to celebrate a running friend who is getting married next month. We went to Monello in Little Italy. I ordered a pureed fresno & jalapeno pepper gnocchi. SO, SO good!
